Ingredients

  • 2 large eggplants, sliced
  • 2 tomatoes, finely chopped
  • 200 g feta cheese, crumbled
  • 100 g melting cheese (e.g., mozzarella), shredded
  • 2 garlic cloves, minced
  • Oregano
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Wash the eggplants and slice them into rounds.
  2. Lightly brush both sides of each slice with olive oil and place them on a baking tray lined with parchment paper.
  3. Bake at 190–200°C (375–400°F) for about 20 minutes.
  4. After 20 minutes, top each slice with chopped tomatoes, crumbled feta, minced garlic, oregano, salt, pepper, and shredded melting cheese.
  5. Return to the oven and bake for an additional 15 minutes, or until the cheese has melted and turned golden.
