- 2 large eggplants, sliced
- 2 tomatoes, finely chopped
- 200 g feta cheese, crumbled
- 100 g melting cheese (e.g., mozzarella), shredded
- 2 garlic cloves, minced
- Oregano

Instructions
- Wash the eggplants and slice them into rounds.
- Lightly brush both sides of each slice with olive oil and place them on a baking tray lined with parchment paper.
- Bake at 190–200°C (375–400°F) for about 20 minutes.
- After 20 minutes, top each slice with chopped tomatoes, crumbled feta, minced garlic, oregano, salt, pepper, and shredded melting cheese.
- Return to the oven and bake for an additional 15 minutes, or until the cheese has melted and turned golden.
