Ingredients

  • 20 thin slices of country-style sausage
  • 8 button mushrooms, sliced
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 4 eggs
  • 100 g milk
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Heat a little olive oil in a pan and fry the sausage slices on both sides until browned.
  2. Once ready, remove the sausages and place them in a bowl.
  3. In the same oil, sauté the chopped onion for 3 minutes.
  4. Add the mushrooms and red pepper, and sauté everything together for another 3 minutes until the liquids evaporate.
  5. Lightly season with salt, stir, and add the sausage slices from the bowl back into the pan.
  6. In the meantime, beat the eggs, milk, and a pinch of salt in a bowl with a fork.
  7. Pour the egg mixture over the ingredients in the pan, cover the pan, and reduce the heat.
  8. Cook on low heat for 1-2 minutes until the eggs set, then flip the omelette using a plate and cook the other side until golden.
  9. When serving, sprinkle the omelette with pepper.
