Ingredients
- 20 thin slices of country-style sausage
- 8 button mushrooms, sliced
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 4 eggs
- 100 g milk
- Salt
- Pepper
- Olive oil
Instructions
- Heat a little olive oil in a pan and fry the sausage slices on both sides until browned.
- Once ready, remove the sausages and place them in a bowl.
- In the same oil, sauté the chopped onion for 3 minutes.
- Add the mushrooms and red pepper, and sauté everything together for another 3 minutes until the liquids evaporate.
- Lightly season with salt, stir, and add the sausage slices from the bowl back into the pan.
- In the meantime, beat the eggs, milk, and a pinch of salt in a bowl with a fork.
- Pour the egg mixture over the ingredients in the pan, cover the pan, and reduce the heat.
- Cook on low heat for 1-2 minutes until the eggs set, then flip the omelette using a plate and cook the other side until golden.
- When serving, sprinkle the omelette with pepper.
