Ingredients for Kurkoubinia:

  • 1 pack of phyllo pastry
  • 50 g melted butter
  • Vegetable oil for frying

For the Chocolate Coating:

  • 125 g dark chocolate (couverture)
  • 1 tablespoon butter
  • 4 tablespoons milk

For the Syrup:

  • 500 g sugar
  • 350 g water
  • Juice of half a lemon

Instructions:

Prepare the Kurkoubinia:

  1. Lay out the phyllo sheets two at a time, brushing melted butter between them.
  2. Fold the layered phyllo in half and brush with more butter.
  3. Roll the phyllo into a tight log. Dab the edge with a little water to seal it.
  4. Place the logs in the refrigerator to firm up.
  5. Once chilled, cut the logs into bite-sized pieces.
  6. Fry the pieces in hot oil until golden brown. Remove with a slotted spoon and drain on kitchen paper.

Prepare the Syrup:

  1. Combine the syrup ingredients (sugar, water, lemon juice) in a pot and bring to a boil.
  2. Simmer for 5 minutes.
  3. Immerse the fried kurkoubinia in the syrup, a few at a time, letting them soak for 2-3 minutes. Remove and set aside.

Prepare the Chocolate Coating:

  1. Melt the chocolate in a double boiler (bain-marie) along with the butter and milk. Stir until smooth.
  2. Dip the syrup-soaked kurkoubinia into the melted chocolate, coating them evenly.
  3. Place the chocolate-coated kurkoubinia on a tray and refrigerate until the chocolate sets.
