Ingredients
- 600 g sugar
- 500 g water
- 100 g pomegranate juice (for color)
- 6-7 tablespoons cornstarch
- Juice of half a lemon
- 2 teaspoons rose water or 1 vanilla extract
- 10 g gelatin (1 sheet or 1 sachet)
- 1-2 tablespoons cornstarch (for dusting)
- Icing sugar (for dusting)
Preparation
- Make the Syrup
- In a saucepan, combine half of the water with the sugar and bring to a boil. Simmer for about 5 minutes, stirring occasionally, until the sugar is fully dissolved.
- Prepare the Cornstarch Mixture
- In a bowl, mix the remaining water with the pomegranate juice and dissolve the cornstarch.
- Combine the Mixtures
- Gradually pour the cornstarch mixture into the sugar syrup while stirring continuously to prevent lumps.
- Add Gelatin and Flavorings
- Soak the gelatin in cold water for 5 minutes to soften, then drain and add it to the syrup.
- Stir in the lemon juice and rose water (or vanilla) and continue cooking over medium heat, stirring constantly, until the mixture thickens.
- Set the Mixture
- Once thickened, pour the mixture into a baking dish lined with parchment paper, spreading it evenly.
- Allow it to cool completely at room temperature.
- Cut and Dust
- Once cooled and set, cut the mixture into small squares. Dust with a mixture of icing sugar and cornstarch to prevent sticking.
