- 1 medium zucchini, chopped
- 1 medium potato, quartered
- 4 ripe tomatoes, finely chopped
- 1 bunch parsley, finely chopped
- 2 medium onions, finely chopped

Preparation
- Prepare the Vegetables
- Clean the green beans by removing the ends, wash them thoroughly, and place them in a colander to drain.
- Trim the ends of the zucchini, wash it, chop it into pieces, and add it to the green beans.
- Cook the Base
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.
- Stir in the chopped tomatoes and cook for 2-3 minutes to let the flavors meld.

- Add the green beans, zucchini, potato, salt, and enough water to just cover the vegetables.
