Ingredients

  • 1 kg fresh green beans
  • 1 medium zucchini, chopped
  • 1 medium potato, quartered
  • 4 ripe tomatoes, finely chopped
  • 1 bunch parsley, finely chopped
  • 2 medium onions, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • Olive oil

Preparation

  1. Prepare the Vegetables
    • Clean the green beans by removing the ends, wash them thoroughly, and place them in a colander to drain.
    • Trim the ends of the zucchini, wash it, chop it into pieces, and add it to the green beans.
  2. Cook the Base
    • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent.
    • Stir in the chopped tomatoes and cook for 2-3 minutes to let the flavors meld.
  3. Combine the Ingredients
    • Add the green beans, zucchini, potato, salt, and enough water to just cover the vegetables.
  4. Simmer
    • Cover the pot and cook over medium heat for 40-45 minutes, until the beans are tender and the sauce has thickened. Stir occasionally and add a little water if needed to prevent sticking.
  5. Finish and Serve
    • Once cooked, adjust the seasoning with salt, pepper, and sweet paprika to taste. Sprinkle with parsley before serving.
