Santorini Fava (Yellow Split Pea Purée)

In the golden embrace of Santorini’s flavors, legumes come alive as yellow split peas yield a creamy, sun-kissed purée—rich with olive oil’s shimmer, perfumed with oregano, and crowned with rustic simplicity.

Ingredients

  • 500 g yellow split peas (fava)
  • 1 onion, sliced
  • 1.5 liters water
  • 60 g olive oil
  • Oregano
  • Salt

For the garnish

  • 1 onion, sliced
  • 3–4 tbsp olive oil
  • 1 tbsp vinegar
  • Olives

Method
Soak the fava in a bowl of water for 1 hour.
After 1 hour, drain it in a colander.

In a pot, heat the olive oil and add the onion. Sauté until the onion becomes translucent but not browned. Then add the salt, water, oregano, and fava. Stir continuously until the water starts to boil, skimming off any dark foam that forms on the surface.

When it comes to a boil, reduce the heat and let it simmer for about 50 minutes without stirring, to avoid sticking. Once the fava is cooked, turn off the heat and mash it with an immersion blender or potato masher until smooth.

Serve warm with sliced onion, olive oil, a splash of vinegar (for those who like it), and olives.
