- 500g cauliflower, well-boiled
- 200g feta cheese
- 200g flour
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 Florina pepper, finely chopped
- 1 tomato, grated (without its juices)
- 1 small zucchini, grated and well-squeezed
- 1 small bunch parsley, finely chopped
- Salt
- Pepper
- Sweet paprika
- Oregano
- 2 tablespoons olive oil
- 2 tablespoons mustard
- Olive oil for frying
Instructions
- Separate the cauliflower into florets, wash them thoroughly, and boil them in salted water until soft.
- Once cooked, place the florets in a bowl and mash them using a potato masher.
- Add the onion, garlic, Florina pepper, grated tomato, grated zucchini, crumbled feta cheese, parsley, salt, pepper, paprika, oregano, olive oil, mustard, and flour.
- Mix everything together thoroughly until well combined, then refrigerate for at least 30 minutes to allow the flavors to meld.
- After 30 minutes, remove the mixture from the fridge, shape it into patties, and place them on a plate lined with parchment paper.
- Heat olive oil in a frying pan over medium heat and fry the patties on both sides until they turn golden brown.
