Ingredients

  • 500g cauliflower, well-boiled
  • 200g flour
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 Florina pepper, finely chopped
  • 1 tomato, grated (without its juices)
  • 1 small zucchini, grated and well-squeezed
  • 1 small bunch parsley, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • Oregano
  • 2 tablespoons olive oil
  • 2 tablespoons mustard
  • Olive oil for frying

Instructions

  1. Cut the cauliflower into florets, wash them, and boil in salted water until soft.
  2. Once cooked, place the florets in a bowl and mash them using a potato masher.
  3. Add the onion, garlic, Florina pepper, grated tomato, grated zucchini, parsley, salt, pepper, paprika, oregano, olive oil, mustard, and flour.
  4. Knead the mixture well until all ingredients are combined, then refrigerate for at least 30 minutes to enhance the flavors.
  5. After 30 minutes, remove the mixture from the fridge and shape it into patties. Place the patties on a plate lined with parchment paper.
  6. Heat olive oil in a frying pan over medium heat and fry the fritters on both sides until golden brown.
