Ingredients

  • 3 sweet potatoes
  • 100 g crumbled feta cheese
  • 1 Florina pepper (or red bell pepper), finely chopped
  • A handful of parsley, finely chopped
  • Salt
  • Pepper
  • Oregano
  • 1 garlic clove, finely chopped
  • Olive oil

Instructions

  1. Prepare the Sweet Potatoes:
    Wash the sweet potatoes thoroughly and cut them into pieces of your preferred size.
  2. Combine Ingredients:
    Place the sweet potato pieces on a baking tray. Add the crumbled feta, chopped pepper, parsley, salt, pepper, garlic, oregano, and a drizzle of olive oil. Mix well to coat the sweet potatoes evenly with the ingredients.
  3. Bake:
    Preheat the oven to 180-190°C (356-374°F). Bake the sweet potatoes for 35-40 minutes.
  4. Flip for Crispness:
    Once the sweet potatoes are golden on one side, carefully flip them to the other side to ensure they cook evenly and turn crispy.
  5. Serve:
    Serve the sweet potatoes hot and crispy, straight from the oven.
