Ingredients
- 1/2 white cabbage, coarsely or finely chopped
- 1 carrot, sliced
- 1 onion, finely chopped
- 6 spring onions, finely chopped
- 1/2 bunch celery, finely chopped
- 2 tomatoes, diced
- 1 green bell pepper, sliced into rings
- 1 tbsp olive oil (to be added to the plate)
- Salt
- Pepper
- Lemon
Instructions
- In a large pot, place the cabbage, celery, carrot, and salt. Add enough water to just cover the ingredients.
- Bring to a boil over high heat. Once boiling, reduce the heat and simmer for 10 minutes.
- Add the remaining ingredients (onion, spring onions, tomatoes, and green bell pepper) to the pot and simmer for another 10 minutes.
- Serve the soup hot, drizzling olive oil and squeezing fresh lemon juice directly into each plate for added flavor.
