Ingredients

  • 1/2 white cabbage, coarsely or finely chopped
  • 1 carrot, sliced
  • 1 onion, finely chopped
  • 6 spring onions, finely chopped
  • 1/2 bunch celery, finely chopped
  • 2 tomatoes, diced
  • 1 green bell pepper, sliced into rings
  • 1 tbsp olive oil (to be added to the plate)
  • Salt
  • Pepper
  • Lemon

Instructions

  1. In a large pot, place the cabbage, celery, carrot, and salt. Add enough water to just cover the ingredients.
  2. Bring to a boil over high heat. Once boiling, reduce the heat and simmer for 10 minutes.
  3. Add the remaining ingredients (onion, spring onions, tomatoes, and green bell pepper) to the pot and simmer for another 10 minutes.
  4. Serve the soup hot, drizzling olive oil and squeezing fresh lemon juice directly into each plate for added flavor.
