Ingredients
- 10 large white mushrooms
- 200 g melting cheese
- 1 medium sausage, chopped into small pieces
- 40 g breadcrumbs
- 1 cup strained yogurt
- 1 tablespoon plant-based butter
- 2 garlic cloves, minced
- A small amount of chopped parsley
- A small amount of chopped basil
- Salt
- Pepper
- Olive oil
Preparation
- Prepare the Sausage:
Heat a little olive oil in a pan over medium heat. Sauté the sausage pieces until they are golden, then set them aside. - Prepare the Mushroom Filling:
Carefully remove the stems from the mushrooms and finely chop them. Place the chopped stems in a bowl and add half of the cheese, breadcrumbs, butter, garlic, parsley, basil, the sautéed sausage, salt, pepper, and yogurt. Mix well until all the ingredients are combined. - Prepare the Mushrooms:
Drizzle a bit of olive oil into a baking dish and place the mushroom caps inside. Using a spoon, fill each mushroom cap with the prepared mixture. - Top and Bake:
Sprinkle the remaining cheese on top of each stuffed mushroom and add a few drops of olive oil to each. Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes, or until the mushrooms are tender and the cheese is melted and golden.
