Ingredients

  • 500 g mushrooms, sliced
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 50 g wine
  • 2 tablespoons parsley, finely chopped
  • 200 g water
  • 100 g heavy cream
  • Salt
  • Pepper
  • 1 tablespoon butter
  • Olive oil

Preparation

  1. Sauté the Base Ingredients:
    In a pot, heat the olive oil over medium heat. Add the onion, garlic, and parsley, and sauté until fragrant.
  2. Cook the Mushrooms:
    Add the mushrooms to the pot and sauté until they release their juices. Deglaze the pot with the wine, letting it simmer for a minute.
  3. Simmer the Soup:
    Add the water and bring the mixture to a gentle simmer. Cook on medium heat for 25-30 minutes until the flavors meld together.
  4. Finish with Cream and Butter:
    Stir in the salt, pepper, heavy cream, and butter. Mix well, then remove the soup from the heat.
