Ingredients

  • 500 g spaghetti (size #6)
  • 500 g shrimp, peeled
  • 3 garlic cloves, finely chopped
  • 1 shot of ouzo
  • 4 ripe tomatoes, finely chopped
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon hot paprika
  • 1/2 bunch parsley, finely chopped
  • Zest of 1 lemon
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook the spaghetti 2–3 minutes less than the package instructions. Reserve a glass of the pasta water, drain the spaghetti, and set aside.
  2. Prepare the Shrimp:
    In a separate pot, heat olive oil over medium heat. Sauté the garlic and shrimp for 2–3 minutes until the shrimp turn pink. Use a slotted spoon to remove the shrimp and set them aside in a bowl.
  3. Make the Sauce:
    In the same pot, add the chopped tomatoes, ouzo, paprika, salt, and pepper. Cook the mixture for 7–8 minutes until the sauce thickens slightly.
  4. Combine Everything:
    Add the spaghetti to the sauce along with some of the reserved pasta water, as needed, to achieve a saucy consistency. Stir in the cooked shrimp and parsley, and simmer everything together for 2–3 minutes.
  5. Serve:
    Plate the pasta while hot and sprinkle with lemon zest before serving.
