- 1 kg yellow pumpkin
- 80 g flour
- 1 onion, finely chopped
- 2 eggs
- Parsley, finely chopped
- Mint, finely chopped
- 200 g feta cheese, crumbled
- Salt

Instructions
- Clean the pumpkin by removing the seeds and the tough outer skin.
- Grate the pumpkin into a large bowl and sprinkle with a little salt. Rub the grated pumpkin with your hands to release its juices. Squeeze handfuls of the pumpkin to remove the excess moisture and place it into a separate bowl.
- Add the eggs, parsley, mint, onion, salt, pepper, and crumbled feta to the bowl with the pumpkin. Gradually mix in the flour until well combined. Let the mixture rest for a few minutes.
- Heat oil in a frying pan over medium heat. Use a tablespoon to scoop portions of the mixture, place them in the pan, and slightly flatten each fritter so they cook evenly.
- Fry the fritters until they develop a golden color on both sides. Remove and place on paper towels to drain excess oil.
