Ingredients

  • 1 kg yellow pumpkin
  • 80 g flour
  • 1 onion, finely chopped
  • 2 eggs
  • Parsley, finely chopped
  • Mint, finely chopped
  • 200 g feta cheese, crumbled
  • Salt
  • Pepper

Instructions

  1. Clean the pumpkin by removing the seeds and the tough outer skin.
  2. Grate the pumpkin into a large bowl and sprinkle with a little salt. Rub the grated pumpkin with your hands to release its juices. Squeeze handfuls of the pumpkin to remove the excess moisture and place it into a separate bowl.
  3. Add the eggs, parsley, mint, onion, salt, pepper, and crumbled feta to the bowl with the pumpkin. Gradually mix in the flour until well combined. Let the mixture rest for a few minutes.
  4. Heat oil in a frying pan over medium heat. Use a tablespoon to scoop portions of the mixture, place them in the pan, and slightly flatten each fritter so they cook evenly.
  5. Fry the fritters until they develop a golden color on both sides. Remove and place on paper towels to drain excess oil.
