Pita Dough

Ingredients

  • 500 g all-purpose flour
  • 1/2 packet yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for each pita during cooking

Instructions

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add lukewarm water while kneading to form a soft dough.
  3. Cover the bowl with a clean towel and let the dough rise for 1 hour.
  4. Divide the dough into 4 or 5 pieces, depending on the desired pita size.
  5. Shape each piece into a round pita using your hands or a rolling pin.
  6. Heat a non-stick pan, add a few drops of olive oil, and cook each pita for 3–4 minutes on each side.
  7. Keep the pitas warm to maintain their elasticity until serving.

Ingredients for 2 Servings

  • 500 g calamari
  • 4 medium potatoes
  • 10 cherry tomatoes
  • 1 onion, sliced
  • Lettuce leaves
  • Salt
  • 200 g flour (for dredging calamari)
  • Olive oil

Instructions

For the Calamari
  1. Clean the calamari and cut it into rings.
  2. Wash them well, place them in a colander, season with salt, and let them drain.
  3. Heat the olive oil in a pan over high heat.
  4. In a bowl, combine the flour with a little salt. Dredge the calamari rings in the flour, ensuring they are well-coated.
  5. Fry the calamari in batches for 2–3 minutes until golden.
  6. Remove with a slotted spoon and place on paper towels to drain excess oil.

For the Fries
  1. Peel and wash the potatoes.
  2. Cut them into rectangular strips suitable for frying.
  3. Heat the olive oil in a pan over high heat.
  4. Fry the potatoes until golden and crispy.
  5. Remove with a slotted spoon and place on paper towels to drain excess oil.

To Assemble
  1. Place the pitas on plates.
  2. Add the fries and season with salt.
  3. Top with the fried calamari, cherry tomatoes, onion slices, and lettuce leaves.
