Pita Dough
Ingredients
- 500 g all-purpose flour
- 1/2 packet yeast
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp vinegar
- Lukewarm water
- A few drops of olive oil for each pita during cooking
Instructions
- Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
- Gradually add lukewarm water while kneading to form a soft dough.
- Cover the bowl with a clean towel and let the dough rise for 1 hour.
- Divide the dough into 4 or 5 pieces, depending on the desired pita size.
- Shape each piece into a round pita using your hands or a rolling pin.
- Heat a non-stick pan, add a few drops of olive oil, and cook each pita for 3–4 minutes on each side.
- Keep the pitas warm to maintain their elasticity until serving.
Ingredients for 2 Servings
- 500 g calamari
- 4 medium potatoes
- 10 cherry tomatoes
- 1 onion, sliced
- Lettuce leaves
- Salt
- 200 g flour (for dredging calamari)
- Olive oil
Instructions
For the Calamari
- Clean the calamari and cut it into rings.
- Wash them well, place them in a colander, season with salt, and let them drain.
- Heat the olive oil in a pan over high heat.
- In a bowl, combine the flour with a little salt. Dredge the calamari rings in the flour, ensuring they are well-coated.
- Fry the calamari in batches for 2–3 minutes until golden.
- Remove with a slotted spoon and place on paper towels to drain excess oil.
For the Fries
- Peel and wash the potatoes.
- Cut them into rectangular strips suitable for frying.
- Heat the olive oil in a pan over high heat.
- Fry the potatoes until golden and crispy.
- Remove with a slotted spoon and place on paper towels to drain excess oil.
To Assemble
- Place the pitas on plates.
- Add the fries and season with salt.
- Top with the fried calamari, cherry tomatoes, onion slices, and lettuce leaves.
