Leek Pie (Prasopita)

Leek Pie (Prasopita) is a rustic harmony of tender leeks, creamy cheese, and golden phyllo layers baked to perfection. Each slice blends earthy sweetness with buttery crispness, bringing warmth and tradition to the table.

Ingredients
For the Filling:

  • 6 leeks
  • 3 eggs
  • 200 g grated graviera cheese (or similar hard cheese)
  • 200 g crumbled feta cheese
  • 1 bunch dill, finely chopped
  • Salt
  • Pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter

For the Dough:

  • 500 g all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 100 g olive oil
  • 150 g water

Preparation

For the Filling:

  1. Clean, wash, and finely chop the leeks.
  2. In a large frying pan, heat the olive oil and butter over medium heat. Sauté the leeks with the dill for about 8-10 minutes until softened.
  3. Remove from heat and let cool.
  4. Add the grated cheeses, beaten eggs, pepper, and a pinch of salt if needed (be cautious as the cheeses are salty).
  5. Mix thoroughly to combine all ingredients and set aside.

For the Dough:

  1. In a large bowl, place the flour and make a well in the center.
  2. Add the vinegar, salt, and olive oil.
  3. Mix with your hands, ensuring the oil is evenly distributed throughout the flour.
  4. Gradually add the water while kneading until a soft dough forms that doesn’t stick to your hands. Add a little extra flour if needed.
  5. Divide the dough into 4 equal pieces.
  6. Roll out each piece on a floured surface to create thin sheets.

Assembling the Pie:

  1. Grease a baking tray lightly with olive oil. Place the first sheet of dough in the tray.
  2. Drizzle a little olive oil over the sheet, then layer the second sheet on top.
  3. Spread the leek filling evenly over the dough.
  4. Roll out the remaining two sheets and place them on top in the same way, brushing each layer with olive oil.
  5. Finish by drizzling a bit of olive oil over the top layer.

Baking:

  1. Preheat your oven to 170–180°C (340–355°F).
  2. Bake the pie for approximately 60 minutes or until golden and crispy, depending on your oven.

Serving Suggestion
Allow the pie to cool slightly before slicing. Serve warm or at room temperature as a main dish or an appetizer.

Closing Note
Leek pie, or “prasopita,” is a classic Greek comfort food that celebrates the natural sweetness of leeks and the tanginess of feta cheese. Its crispy, golden layers and rich filling make it a delightful treat for any time of the day. Enjoy this authentic taste of Greece!

Why It’s Irresistible
