Ingredients

  • 100 g taramas (fish roe paste)
  • 6–8 spring onions, finely chopped
  • ½ bunch of dill, finely chopped
  • 2 tablespoons of mint, finely chopped
  • 4 slices of stale bread, soaked and squeezed
  • Pepper
  • Flour for frying
  • Olive oil

Instructions

  1. Sauté the Onions:
    Heat olive oil in a frying pan and sauté the spring onions until golden. Add the dill, mint, and a dash of pepper, stir well, and set aside.
  2. Prepare the Mixture:
    In a bowl, combine the soaked bread with the taramas and mix thoroughly. Add the sautéed onions and herbs, blending until the ingredients are fully incorporated.
  3. Shape the Fritters:
    Form the mixture into small patties and coat them lightly with flour.
  4. Fry the Fritters:
    Heat olive oil in a frying pan and fry the patties on both sides until golden brown.
  5. Serve:
    Serve the fritters hot, garnished with fresh herbs or a wedge of lemon for extra zest.
