Ingredients for the Cod

  • 1 piece of salt-cured cod
  • Olive oil
  • Flour

Preparation for the Cod

  1. Cut the cod into pieces, place them in a large bowl, and cover with plenty of water. Soak for 34-36 hours, changing the water every 4-5 hours to remove the salt.
  2. Once desalted, drain the cod pieces in a strainer.
  3. Heat a frying pan over medium heat, add olive oil, and let it get hot.
  4. Meanwhile, dredge the cod first in flour and then in the batter (recipe below).
  5. Fry the cod in the hot oil, turning to achieve a golden color on both sides. Coating the cod in flour before dipping it in the batter helps the batter adhere evenly and reduces oil absorption.

  • Flour (as needed)
  • 3 tablespoons mustard
  • Salt

  3. Let the batter rest for 10 minutes before using.
