Ingredients for the Pita Bread

  • 500 g all-purpose flour
  • ½ packet of yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Preparation for the Pita Bread

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add lukewarm water and knead until you have a soft dough that doesn’t stick to your hands.
  3. Cover the dough with a clean kitchen towel and let it rise for 1 hour.
  4. Divide the dough into 4–5 pieces, depending on your preferred pita size.
  5. Roll out each piece with your hands or a rolling pin, adding a few drops of olive oil.
  6. Cook each pita in a non-stick pan for 3–4 minutes on each side.
  7. Keep warm to maintain flexibility for wrapping.

Ingredients for 4 Wraps

  • 500 g calamari, cleaned and cut into rings
  • 4 potatoes
  • 20 cherry tomatoes
  • 1 onion, sliced
  • Salt
  • 200 g flour (for dredging the calamari)
  • Olive oil (for frying)

Preparation for the Calamari

  1. Clean the calamari, cut them into rings, rinse, and drain in a colander.
  2. Sprinkle with salt, mix well, and let them rest to remove excess moisture.
  3. Heat oil in a deep frying pan over high heat.
  4. In a bowl, mix the flour with a pinch of salt.
  5. Coat the calamari rings thoroughly in the flour mixture.
  6. Fry the calamari in batches in the hot oil for 2–3 minutes until golden.
  7. Remove with a slotted spoon and place on paper towels to drain excess oil.

  1. Peel and wash the potatoes.
  2. Cut into rectangular strips for frying.
  3. Heat oil in a pan over high heat and fry the potatoes until golden brown.
  4. Remove with a slotted spoon and place on paper towels to drain excess oil.

Assembling the Wraps

  1. Lay the pitas flat on your kitchen counter.
  2. Add fried potatoes, calamari rings, sliced onion, and cherry tomatoes to each pita.
  3. Fold the edges of the pita together on one side and roll tightly to form a wrap.
