Youvarlakia (Meatball Soup)

Ingredients
- 500 g ground beef
- 60 g rice
- 1 egg
- 1 onion, blended
- A pinch of cumin
- A little parsley
- A pinch of oregano
- A small amount of ginger
- 2 potatoes, diced
- 2 large carrots, sliced into rounds
- 300 g water
- Salt
- Pepper
- 1 tablespoon flour
- Juice from 1 lemon
- Olive oil
Instructions
- In a bowl, combine the ground beef with the rice, egg, cumin, parsley, oregano, ginger, onion, and 2 tablespoons of olive oil. Knead the mixture well to combine the ingredients, then cover and refrigerate for at least 30 minutes.
- Meanwhile, peel and chop the potatoes and carrots.
- In a pot, add the water, potatoes, carrots, olive oil, salt, and pepper. Bring to a boil over medium heat.
- While the vegetables are cooking, shape the meat mixture into small meatballs (youvarlakia) and add them to the pot.
- Let the soup simmer for 35-40 minutes until the meatballs are cooked through and the vegetables are tender.
- In a separate bowl, take a ladle of broth from the pot and let it cool slightly. Add the lemon juice and dissolve the flour in the broth.
- Pour the mixture back into the pot, stir, and let the soup simmer for another 5 minutes before turning off the heat.
