Cauliflower with Stewed Chicken
Tender chicken stews slowly with cauliflower florets, tomatoes, paprika, garlic, and sweet onion until every bite resonates with warmth. In the heart of this humble dish, succulent meat mingles with soft cauliflower and tomato-kissed sauce—comfort in its purest form.
Ingredients:
1 medium chicken
1 medium cauliflower, cut into pieces
2 medium onions, finely chopped
1-2 garlic cloves, finely chopped
1 bunch of parsley or any herb you like, finely chopped
2 ripe tomatoes, finely chopped
1 tablespoon tomato paste
150 g water
Salt
Pepper
Sweet paprika
Olive oil
Instructions:
In a pot, heat the olive oil and lightly sauté the cauliflower and chicken. Once they are lightly sautéed, transfer them to a bowl.
In the same oil, sauté the onion and garlic for 2 minutes. Then, add the tomatoes and tomato paste and sauté for another minute.
Finally, return the cauliflower and chicken to the pot. Add the water, salt, pepper, paprika, and parsley.
Let the dish simmer over medium heat for 45-50 minutes. If needed, add a little hot water.
