Ingredients

  • 400 g cooked white beans
  • 100 g cooking broth from the beans
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • Juice of half a lemon
  • Salt
  • Pepper
  • 4 tbsp olive oil

Instructions

  1. Sauté Aromatics:
    Heat 2 tablespoons of olive oil in a pan, sauté the onion and garlic lightly until fragrant, then set aside.
  2. Combine Ingredients:
    In a bowl, add the cooked beans, salt, pepper, lemon juice, olive oil, and the sautéed onion and garlic.
  3. Blend:
    Use an immersion blender to purée the mixture until smooth, or transfer it to a blender for a creamier texture.
  4. Adjust Consistency:
    If the purée is too thick, add a bit of the reserved bean broth, blending until it reaches your desired consistency.
