Pita Bread Dough

Ingredients:

  • 500 g all-purpose flour
  • 1/2 packet dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp vinegar
  • Lukewarm water
  • A few drops of olive oil for cooking each pita

Instructions for the Dough:

  1. Sift the flour into a bowl, make a well in the center, and add the yeast, salt, vinegar, and sugar.
  2. Gradually add the lukewarm water while kneading until a soft dough forms that doesn’t stick to your hands.
  3. Cover the bowl with a towel and let the dough rise for 1 hour.
  4. Divide the dough into 4-5 pieces depending on your preferred pita size.
  5. Flatten each piece using your hands or a rolling pin and drizzle a few drops of olive oil on each.
  6. Cook the pitas in a non-stick pan for 3-4 minutes on each side.
  7. Keep the pitas warm to maintain their elasticity until ready to fold.

Kebab Ingredients

  • 500 g ground lamb
  • 1 red bell pepper, finely blended
  • 2 tbsp vinegar
  • 1 onion, finely chopped
  • 1/2 bunch fresh parsley, finely chopped
  • 30 g olive oil
  • Sweet paprika
  • Black pepper
  • Salt
  • 20 g water

Instructions for the Kebab:

  1. Place all the ingredients in a bowl and begin kneading.
  2. Gradually add the water as you knead.
  3. Knead for an additional 15 minutes until the meat mixture becomes light and fluffy.
  4. Cover the bowl and refrigerate for 2 hours.
  5. Remove the mixture from the fridge, knead lightly, and shape into kebabs of your desired size.
  6. Heat a grill pan over medium heat without adding oil and cook the kebabs for 4-5 minutes on each side.

Fries Ingredients

  • 5-6 medium potatoes
  • Olive oil for frying

Instructions for the Fries:

  1. Peel and wash the potatoes, then cut them into rectangular strips.
  2. Heat the olive oil in a frying pan and fry the potatoes until golden brown.
  3. Remove the fries and place them on paper towels to absorb excess oil.

Filling and Assembly

Ingredients:

  • 1 fried potato per souvlaki
  • 4-5 slices of tomato per souvlaki
  • 2-3 slices of onion per souvlaki
  • 3-4 arugula leaves
  • 1 red pepper, sliced into rings
  • 1 tbsp yogurt or tzatziki
  • Salt
  • Sweet paprika
  • Parchment paper for wrapping

Assembly Instructions:

  1. Cut parchment paper into rectangular pieces.
  2. Place a pita bread on each piece of parchment paper.
  3. Add the fries, kebab, tomato slices, pepper rings, onion slices, and arugula leaves on top of each pita.
  4. Sprinkle with paprika, season with salt, and top with a spoonful of yogurt or tzatziki.
  5. Carefully fold the pita by gathering the edges on one side and wrapping it securely in parchment paper.
