Ingredients

  • 1 chicken breast, cut into thin strips
  • 200 g noodles
  • 1 small carrot, sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 zucchini, sliced
  • 2 ripe tomatoes, diced
  • 1 red bell pepper, chopped
  • 100 g water
  • Salt
  • Pepper
  • Olive oil

Instructions

For the Noodles

  1. Bring water to a boil in a pot, then add the noodles.
  2. Stir, turn off the heat, and let them soak for 3–4 minutes.
  3. Drain, add 1 tbsp of olive oil to prevent sticking, and set aside.

For the Vegetables and Chicken

  1. Heat olive oil in a pan and sauté the onion, garlic, carrot, zucchini, and red pepper for 2–3 minutes.
  2. Add the chicken strips and tomatoes, cooking everything together for another 3–4 minutes.
  3. Pour in the water, season with salt and pepper, and simmer for 5 minutes.

Combine

  1. Add the noodles to the pan and stir well to combine all ingredients.
  2. Remove from heat and serve hot.
