
Ingredients
- 1 chicken breast, cut into thin strips
- 200 g noodles
- 1 small carrot, sliced
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 zucchini, sliced
- 2 ripe tomatoes, diced
- 1 red bell pepper, chopped
- 100 g water
- Salt
- Pepper
- Olive oil
Instructions
For the Noodles
- Bring water to a boil in a pot, then add the noodles.
- Stir, turn off the heat, and let them soak for 3–4 minutes.
- Drain, add 1 tbsp of olive oil to prevent sticking, and set aside.
For the Vegetables and Chicken
- Heat olive oil in a pan and sauté the onion, garlic, carrot, zucchini, and red pepper for 2–3 minutes.
- Add the chicken strips and tomatoes, cooking everything together for another 3–4 minutes.
- Pour in the water, season with salt and pepper, and simmer for 5 minutes.
Combine
- Add the noodles to the pan and stir well to combine all ingredients.
- Remove from heat and serve hot.
