Ingredients

  • 300 g chickpeas
  • 2 liters of water (for boiling the chickpeas)
  • Juice of 1 lemon
  • Lemon zest
  • 100 g tahini
  • 1/2 teaspoon cumin
  • Pepper
  • 2-3 garlic cloves, minced
  • A pinch of paprika
  • Salt
  • 150 g olive oil
  • Chili flakes (boukovo)

Instructions

  1. Soak the Chickpeas:
    Place the chickpeas in a bowl of water and let them soak overnight.
  2. Cook the Chickpeas:
    The next morning, drain and rinse the chickpeas. Add them to a pot with water and bring to a boil over high heat. Cook for about 1 hour or until they are very soft.
  3. Prepare the Hummus:
    Drain the chickpeas and save the cooking liquid. Add the chickpeas to a blender or food processor.
  4. Blend the Ingredients:
    Add olive oil, lemon zest, lemon juice, garlic, tahini, paprika, salt, and pepper to the blender. Blend until smooth and creamy. If the mixture is too thick, add some of the reserved cooking liquid a little at a time until the desired consistency is achieved.
  5. Serve:
    Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with chili flakes and cumin for a finishing touch.
