Ingredients

  • 5 portions of beef
  • 300g trahana (traditional fermented wheat or pasta)
  • 4 ripe tomatoes, finely chopped
  • 2-3 garlic cloves, finely chopped
  • 2 large onions, finely chopped
  • Salt
  • Pepper
  • Sweet paprika
  • Cinnamon
  • Olive oil

Instructions

  1. Heat olive oil in a pot, add the beef, and brown it on all sides. Once browned, remove the beef, place it in a bowl, and set aside.
  2. In the same oil, sauté the onions and garlic. Add the tomatoes and continue sautéing for 2-3 minutes until they soften and blend.
  3. Return the beef to the pot with the tomato mixture. Cover the beef with water, add salt, pepper, paprika, and a pinch of cinnamon. Cover the pot and simmer for 1 to 1.5 hours until the beef is tender.
  4. Once the beef is ready, remove it and set it aside in a bowl. Add the trahana to the sauce in the pot, stirring continuously as it cooks to prevent sticking.
  5. If more water is needed while the trahana is cooking, add just enough to achieve the desired creamy consistency.
  6. Finally, return the beef to the pot with the trahana, allow everything to cook together for an additional 3-4 minutes, then remove from heat.
