- 5 portions of beef
- 300g trahana (traditional fermented wheat or pasta)
- 4 ripe tomatoes, finely chopped
- 2-3 garlic cloves, finely chopped
- 2 large onions, finely chopped
- Salt
- Pepper
- Sweet paprika
- Cinnamon
- Olive oil
Instructions
- Heat olive oil in a pot, add the beef, and brown it on all sides. Once browned, remove the beef, place it in a bowl, and set aside.
- In the same oil, sauté the onions and garlic. Add the tomatoes and continue sautéing for 2-3 minutes until they soften and blend.
- Return the beef to the pot with the tomato mixture. Cover the beef with water, add salt, pepper, paprika, and a pinch of cinnamon. Cover the pot and simmer for 1 to 1.5 hours until the beef is tender.
- Once the beef is ready, remove it and set it aside in a bowl. Add the trahana to the sauce in the pot, stirring continuously as it cooks to prevent sticking.
- If more water is needed while the trahana is cooking, add just enough to achieve the desired creamy consistency.
- Finally, return the beef to the pot with the trahana, allow everything to cook together for an additional 3-4 minutes, then remove from heat.
