Ingredients

  • 500 g fresh fava beans, cleaned
  • 1 onion, finely chopped
  • 2 spring onions, finely chopped
  • 8–10 slices sun-dried tomatoes
  • 2 ripe tomatoes, finely chopped
  • 1 bunch dill, finely chopped
  • 200 ml water
  • Salt
  • Pepper
  • Paprika
  • Olive oil

Instructions

  1. Prepare the Fava Beans
    • Remove the strings from the fava beans as you would with green beans. For tougher pods, keep only the seeds.
    • Rinse the beans, place them in a pot, and cover with water.
    • Boil over high heat for 10 minutes.
    • Drain the beans, repeat the boiling process once more, and then drain again.
  2. Cook the Aromatics
    • Heat olive oil in the same pot over medium heat. Sauté the onion and spring onions for 3 minutes.
    • Add the fresh tomatoes and sun-dried tomatoes, sautéing everything together for an additional 2 minutes.
  3. Combine and Cook
    • Add the pre-boiled fava beans, dill, salt, pepper, paprika, and water to the pot.
    • Stir gently and simmer for 50–55 minutes, or until the beans are tender.
    • If needed, add more water during cooking to prevent the dish from drying out.
