Ingredients
- 500 g fresh fava beans, cleaned
- 1 onion, finely chopped
- 2 spring onions, finely chopped
- 8–10 slices sun-dried tomatoes
- 2 ripe tomatoes, finely chopped
- 1 bunch dill, finely chopped
- 200 ml water
- Salt
- Pepper
- Paprika
- Olive oil
Instructions
- Prepare the Fava Beans
- Remove the strings from the fava beans as you would with green beans. For tougher pods, keep only the seeds.
- Rinse the beans, place them in a pot, and cover with water.
- Boil over high heat for 10 minutes.
- Drain the beans, repeat the boiling process once more, and then drain again.
- Cook the Aromatics
- Heat olive oil in the same pot over medium heat. Sauté the onion and spring onions for 3 minutes.
- Add the fresh tomatoes and sun-dried tomatoes, sautéing everything together for an additional 2 minutes.
- Combine and Cook
- Add the pre-boiled fava beans, dill, salt, pepper, paprika, and water to the pot.
- Stir gently and simmer for 50–55 minutes, or until the beans are tender.
- If needed, add more water during cooking to prevent the dish from drying out.
