<h2 class="wp-block-heading">Homemade Lemon Liqueur (Using Only the Zest)</h2>



<p>Homemade lemon liqueur using only the zest captures the pure citrus spirit. This lemon liqueur using only the zest is smooth, fragrant, and refreshing. First, the bright zest blends with sugar and honey for natural sweetness. Then, rosemary adds a subtle herbal note. Finally, the result is a lemon liqueur using only the zest that is elegant, golden, and perfect for sipping.</p>



<p><strong>Ingredients</strong></p>

<li>1 kg tsipouro or vodka</li>



<li>500 g water</li>



<li>10 lemons (peel only, no white pith)</li>



<li>450 g sugar</li>



<li>100 g honey</li>



<li>2 sprigs fresh rosemary</li>

<li><strong>Infuse the Spirit:</strong><br>Place the lemon zest in a large glass jar, add the tsipouro (or vodka), seal it tightly, and store in a cool, shaded place for 10 days. During this time, the lemon aroma will infuse into the spirit.</li>



<li><strong>Make the Syrup:</strong><br>After 10 days, bring the water, sugar, and rosemary to a gentle boil in a saucepan, stirring until the sugar dissolves. Once the sugar is melted, add the honey, stir well, and remove from heat. Allow the syrup to cool completely.</li>



<li><strong>Combine Mixtures:</strong><br>Once the syrup is cool, add it to the jar with the infused spirit and lemon zest. Stir well to combine, then seal the jar again and let it rest in the same spot for an additional 5 days.</li>



<li><strong>Strain and Bottle:</strong><br>After 5 more days, strain the liqueur through a fine cloth (without pressing the zest), to ensure your liqueur remains clear and bright. Discard the zest and rosemary. Pour your finished liqueur into sterilized glass bottles.</li>



<li><strong>Rest and Enjoy:</strong><br>Let the bottled liqueur sit for about 5 more days to mellow and develop its full flavor. Now it’s ready to enjoy!</li>

<li><strong>Layer and Macerate:</strong><br>In a large bowl, layer the pitted cherries with the sugar. Once all cherries are layered, pour any collected juices from pitting over them. Cover the bowl well and refrigerate for 2 days to allow the cherries to release their juices and the sugar to dissolve.</li>



<li><strong>Infuse with Alcohol and Spices:</strong><br>After 2 days, transfer the cherries along with all their juices into a sterile glass jar with a tight-fitting lid. Add the cinnamon stick, cloves, brandy, and vodka. Seal the jar and gently swirl the contents to combine.</li>



<li><strong>Mellow in the Sun:</strong><br>Place the jar in a shady spot where it can still catch some sunlight and leave it to infuse for 40 days. Shake or swirl occasionally to ensure the flavors develop beautifully.</li>



<li><strong>Finish and Bottle:</strong><br>Once the 40 days are up, add the lemon juice and strain the mixture through a fine cloth or cheesecloth to remove any solids. Pour the liqueur into sterile glass bottles, seal well, and it’s ready to enjoy.</li>
