● 600 g bananas (peeled)
● 400 g sugar
● 1 cinnamon stick
● 100 g water
● 50 g orange juice
● 1 shot glass cognac
● juice of 1 lemon
Peel the bananas and slice into bite-sized pieces.
Place them in a bowl and pour over the lemon and orange juice.
Put the water and the sugar in a large pot.
Bring to a boil, and once the sugar has dissolved, add the bananas together with the lemon juice and orange juice we poured over the bananas.
Boil for 5 minutes with the sugar and then remove them into a bowl.
Simmer on medium heat until the syrup reaches the right consistency.
Once the syrup is ready, add the bananas, pour in the cognac and boil all together for another 5 minutes.
Turn off the heat, allow to cool and store in a sterilized jar.
Served great with ice cream once it has cooled.
Once it has cooled tilt the plate slightly and if it is not runny, the syrup is ready.
