If you’re using coffee beans, grind them to a fine consistency, similar to espresso grind. If you have pre-ground espresso coffee, that works as well.
Step 2: Brew Espresso
If you have an espresso machine: Prepare a shot of espresso using your espresso machine. Use about 1 to 1.5 ounces (30-45 ml) of espresso per serving.
If you don’t have an espresso machine: Brew espresso using a Moka pot as described in the earlier instructions.
Step 3: Add Sugar
While the coffee is still hot, add 1 to 2 teaspoons of sugar per shot of espresso. The amount of sugar can be adjusted to your taste preference.
Stir the sugar into the hot espresso until it dissolves completely. This step is essential for creating the sweet, syrupy base of Café Cubano.
Step 4: Brew Again
If you’re using a Moka pot, you can place it back on the stovetop over low heat with the sweetened espresso. This step is to create the crema.
When the coffee starts to rise, it will form a layer of foam or crema on top.
Once you see the crema, remove the Moka pot from the heat. Be careful not to let it overflow.
If you’re using an espresso machine, you can simply brew another shot of espresso.
Step 5: Pour and Serve
Pour the Café Cubano into a small coffee cup or a demitasse cup, making sure to include the layer of crema.
The final result should be a strong, sweet coffee with a beautiful layer of crema on top.
